

I managed to secure a late check out for our room allowing us to have a lazy final day before our flight home. This included a delicious long lunch at the local very classy restaurant, Ginger. We were planning our timings for the airport, about to have a post lunch siesta when we discovered we needed to leave straight away and catch the bus. No time to dilly dally….off we marched!
Monday back to work and being a bit tired so felt like a great achievement to produce this lovely sweet potato pie with red onions and spinach.
(Did cheat a bit with premade pastry, please don’t tell anyone 😉 )
